marianne's chicken n wild rice veggie soup

8c low sodium chicken broth1c cooked wild rice1 medium chopped onion1 serving (approx 10) Bolthouse Farms petite carrots2c chopped broccoli3c chopped bok choy1c fresh chopped mushrooms8 oz boneless skinless chicken breast (Tyson's or Thrifty's)1c water (to poach chicken)1 tsp poultry seasoningdash pepper (or to taste)
Cut chicken into 1" cubes and poach in 1 c of water in your covered soup pot (approx 10 minutes) stirring occasionally
While chicken is cooking chop your veggies (onions, broccoli, bok choy & mushrooms, carrots are nice left the serving size)
When chicken is cooked add Chicken Broth, carrots, onions and seasonings and bring to a boil for 5 minutes
Add cooked wild rice, mushrooms and broccoli and boil for 3 minutes
Add bok choy and boil for an extra 2 minutes to just heat thru
Ladle out soup and enjoy...
makes 6 2 cup servings of hearty chicken soup
