Vegan Whole Wheat Cinnamon Raisin Muffins

1 cup whole wheat flour1 tsp baking soda1/2 tsp ground cinnamon1/4 cup brown sugar1/2 cup water1/2 cup unsweetened applesauce1/4 cup raisins
Line a muffin tray with 12 muffin cups, and spray each with non-stick cooking spray. Preheat oven to 350 degress Fahrenheit. Mix whole wheat flour, baking soda, and ground cinnamon in a bowl. Add in brown sugar, water, and unsweetened applesauce, and stir the mixture until the ingredients are well blended. Spoon mixture evenly into12 muffin cups. Bake for approximately 10 to 15 minutes, until muffin tops are golden.
Makes 12 muffins. (Each muffin is 1 serving.)

Made these without raisins because I didn't have any.....they are necessary. The muffins are tasty but need the raisins for texture and sweetness. I think I will try golden raisins in these next time :) Easy to make and quick. I used no liners, just spray and they came out very nicely. - 7/23/12
