St.Patrick's Day Cupcakes

1 3/4 cups flour1 pkg. pistachio pudding mix2/3 cup sugar2 1/2 tsp baking powder1/2 tsp salt2 beaten eggs1 1/4 cup milk1/2 cup cooking oil1 tsp vanilla
1) Preheat oven to 375 degrees.
2) Mix flour, pudding mix, sugar, baking powder, and salt.
3) Combine eggs, milk, oil, and vanilla.
4) Stir into floud mixture.
5) Fill greased or paper lined muffin cups 2/3 full.
6) Bake 18-20 minutes or until golden brown.
*** Makes 18 muffins.
