Italian Chicken with Zucchini

2 tsp olive oil2 boneless, skinless chicken breasts1 medium onion1 1/2 cup sliced zucchini1 1/2 cup stewed tomatoes (fresh)1/2 tsp salt1/2 tsp black pepper1 tsp basil1 tsp parsley1 tsp oreganoPinch of Red pepper1 clove garlic, minced
Cut up chicken in strips. In a large pan, brown chicken pieces in olive oil, until browned on all sides. Add onion and saute until tender crisp. Add tomatoes (I use fresh, stewed in blender). If too thick, add just enough water to allow to simmer. Add all seasonings and simmer for about 15 minutes or until zucchini is at desired tenderness.
May be served over brown rice or whole wheat spaghetti, but not included in recipe. We just eat it in a bowl with a slice of whole wheat toast.
