Spanish Rice

1 table spoon olive oil4 cups brown basmati rice1 cup minced onion2 cups chopped red bell pepper2 cloves garlic2 medium sized tomatoes (or canned tomatoes)pitted green olives oregno (to taste)basil (to taste)black pepper (to taste)cayenne (to taste)parsley (to taste)
Cook rice ahead of time. Also, peel and seed tomatoes beforehand, or used canned.
1. Heat olive oil in a large skillet. Add onion and half of the salt and saute until onion begins to brown.
2. Add red pepper, garlic and herbs and saute for another 5 minutes.
3. Stir in the cooked rice, tomatoes, remaining salt and green olives. Season to taste.
Makes 6-8 servings
