Tofu and Broccoli Stir Fry - The Green Door

Ingredients
VEGETABLES AND TOFU: 1/3 CUP OLIVE OIL1 BLOCK FIRM TOFU, CUT INTO ¾ INCH CUBES1 CUP CARROTS, SLICED INTO THIN DIAGONALS4-5 CUPS BROCCOLI, CUT INTO FLORETS, THE STEMS PEELED AND CUT INTO THIN DIAGONALS1 BUNCH GREEN ONIONS, CUT 1 INCH LONG, INCLUDING THE GREEN PART1 RED PEPPER, SEEDED AND THINLY SLICED1 GREEN PEPPER, SEEDED AND THINLY SLICEDSAUCE: ½ CUP WATER¼ CUP SOY SAUCE2 TSP. FRESH GINGER ROOT, GRATED4 CLOVES GARLIC, CRUSHEDGLAZE: 1 TBSP. ARROWROOT FLOUR¼ CUP WATER
Directions
Heat oil in wok. Sauté tofu on all sides in hot oil, until evenly brown, 10-15 minutes. Add sliced carrots and cook two minutes. Add broccoli florets and stems. Stir until lightly cooked, 5-7 minutes. Add sauce. Cook, stirring occasionally, until broccoli is bright green but still firm. Vegetables must remain lightly cooked and crisp. Add green onions and peppers, and then glaze. Stir until sauce has thickened and remove from heat.

Makes 6 to 8 servings.
