Sourdough Wholemeal Pancakes (1 pancake)

Ingredients
2 Cups Flour2 Cups Water at 110-115F1/3 cup Sourdough Starter (or you can use baker's yeast)1 Tsp Baking Powder1 1/4 Tsp Salt2 Tbsp Vegetable Oil2 Eggs1 Tbsp Sugar
Directions
*additional prep time if using sourdough starter*

Mix flour, water and sourdough starter. Leave for at least 8 hours at room temperature. The longer you leave it, the stronger the "sour" taste.
(reserve 1/3 cup of this fed "starter" for next time, in a crock in the fridge)

Mix in all other ingredients except butter.

Cook in a pan lightly coated with butter. (yes, you could reduce the fat content by using spray oil instead - i prefer the taste of the butter)

Eat. Enjoy. Be happy.

Makes around 8 pancakes using 1/3 cup of mix for each (1 pancake = 1 serving)

I serve with fresh strawberries or a little natural maple syrup (not included in the nutritional analysis)
If using Yeast instead of Sourdough, i would mix the yeast with the warm water, add to flour, and leave to rise a little before mixing in other ingredients. Faster, but not quite so yummy.
