crabulous smothered burrito casserole

Ingredients
8 oz. crab (I used flake style Crab classics)8 oz. broccoli florets (steam in bag type)4 oz. light soft cream cheese8 oz. reduced fat sour cream1 t. lemon pepper1T dried parsley15 oz can black beans, drained and rinsed4 oz. can diced green chilies10 oz. can enchilada sauce (preferable the green type)5- 10" flour tortillas (I use healthy fiber Giant Eagle brand)
Directions
Preheat oven to 375. Steam broccoli in microwave. In large bowl, combine crabmeat, cream cheese, sour cream, lemon pepper, and parsley. Mix well. Spray 9x13 baking pan with olive oil mister. Place 2 1/2 of the tortillas along bottome of the pan. Spread crab mixture over. Top with beans and then the broccoli. Place remaining tortila shells over. Pour enchilada sauce and the green chilies evenly over all. Bake 30 min or until heated through.

Makes 6 generous size servings.
