Condensed Cream of Chicken Soup Mix (equivalent to 1 can)

Ingredients
* 1/2 cup Broth, warmed (or 1/2 tsp chicken base in 1/2 cup water)* 1/2 cup Whole Milk, warmed* 1 tbsp Butter* 1 tbsp Olive Oil* 3 tbsp Flour* Salt & Pepper to tasteOptional Seasonings:grated onionminced garlic or dash garlic powderseasoned-saltparsleylemon pepperpaprika
Directions
1 - Pour broth and milk in coffee maker pot to warm for about 5 min, or place in small soup pot and turn burner to med-low. Meanwhile, gather and pre-measure other ingredients.

2 - In medium soup pan, melt butter with oil (set burner between med-low and medium heat so as not to scorch the butter/oil). Whisk in the flour until smooth.

3 - Very slowly whisk in the broth and milk, simmering and whisking constantly. Do not turn burner to a higher heat. Be patient and it will come to a simmer gently if you add the liquid in small portions. Whisk constantly until fully thickened.

4 - Add salt, pepper, and/or any other seasonings of choice.

Makes the equivalent of 1 can of condensed soup.

    Wow. This is the best and easiet recipe I have seen. Much better than canned, but with a little tweaking, you can almost eliminate the sodium to make it heart healthy. Use salt free butter and sodium free boullion. Will try for sure! - 3/13/10
