Vegetarian Chipotle Chili

Ingredients
1 (15 ounce) can black beans, drained and rinsed (or 1 1/2 - 2 cups cooked beans) 1 (15 ounce) can kidney beans, drained and rinsed (or 1 1/2 - 2 cups cooked beans) 1 can corn, drained1 cup low-sodium chicken broth1 (14 1/2 ounce) can diced tomatoes 1 (14 1/2 ounce) can diced tomatoes and green chilies or diced tomatoes with jalepenos ½ can tomato paste1 cup onions, chopped 6 cloves garlic, crushed2 tablespoons chili powder 1 tsp cumin1 tablespoon sweet Hungarian paprika 1 tablespoon cilantro1 teaspoon fresh coarse ground black pepper 1 teaspoon chipotle chilis, minced (optional)1 teaspoon of the chipotle adobo sauce
Directions
1. Stir everything together in a 4 1/2 quart or larger slow cooker and let cook for 6 hours or longer; OR
2. To speed cook time, throw everythinginto a pot and set to Medium. Cook at least 30 minutes at a simmer; the longer the better.
3. If desired, serve with some shredded cheese and a dollop of sour cream, garnished with fresh cilantro.
