Tacos - Veggie Style

Ingredients
1 red pepper - thinly sliced5-6 oz of crimini mushrooms - sliced1 zucchini or mexican squash - julienned cut5 green onions - chopped1 tsp chipotle1 tsp chili powder1/2 can black beans1/3 can corn1/4 cup cilantro - choppedSalt and pepperPepper jack cheese (or cheddar)Salsa - fresh
Directions
Makes about 10 tacos - calorie count is based on a hearthy helping (3 tacos).

- Saute peppers in olive oil for about 5 minutes.
- Add mushrooms and continue saute for 3 minutes.
- Add chipolte and chili powder
- Add squash and cook 3 more minutes.
- Add corn and beans and heat through.
- Add cilantro and turn off stove top.
- Salt and pepper to taste

Warm redi-made shells in oven for 2-3 minutes or per instructions.

Assembly tacos...we put the cheese in the bottom and then the hot veggies and top with salsa.
