Broccoli Potato Soup

Ingredients
2 cups(about 3/4 pounds) broccoli florets1 small onion, chopped2 cloves garlic, minced4 medium potatoes, peeled and diced2 cups water2 cups rice milk1/2 cup fresh parsley, chopped
Directions
Saute chopped onions and diced garlic in 1/8 cup of water until tender. Add broccoli, potatoes and the 2 cups of water. Bring to a boil, reduce heat and simmer for 15-20 minutes or until vegetables are soft. Stir in milk and parsley. Add salt to taste. Heat but do not boil rice milk. Makes 6 1 cup servings
