Grilled Chipotle Chicken Breasts

Ingredients
5 chipotle peppers, seeded and chopped by hand1-3 cup cilantro leaves2 cloves garlic2 medium shallots1/3 cup rice vinegar1/4 cup olive oilJuice of 2 limes2 chicken breasts
Directions
1. Purée the peppers, cilantro, garlic, shallots and vinegar in a food processor or blender. With the machine running add the oil slowly and then the lime juice. This will be the marinade for your chicken.

2. Divide the marinade into two portions- one to marinate your chicken and another (in a separate container or bowl) to baste your chicken later while it cooks.

3. Marinate the chicken for approximately 1 to 3 hours or overnight. Remove chicken from marinade and grill slowly over medium fire. Discard marinade used by the chicken (for food safety) and baste the chicken with excess marinade that was set aside.

    I used 5 boneless skinless thighs and did not puree ingredients, and no shallots (I forgot). Oh yea, I used Knorrs Chipotle season cubes (3), 3/4 garlic cloves, 2 tbsp cilantro and no salt. Marinated overnight and cooked on George grill. Although a bit altered, it was delicious and a definite keeper - 1/19/09

    Comment: Neitherthe salt nor the oil will be in such high concentration once you've grilled the chicken. It's not a sauce, it's a marinade! What's left on the chicken will be a small percentage of the calorie count. Is it possible that the calorie count was based on the whole quantity of marinade? - 7/18/08

    This was FANTASTIC! Next time I'll wear gloves when deseeding the chiles - my thumbs burned for DAYS and I think I can STILL taste the jalapeno on my thumbs!     My family really enjoyed this chicken. The marinade was very tasty, and while I though that it was going to be a little 'hot' for my husband, he really liked it.

    I liked the taste and the heat. The problem with the calc is it can't distinguish between those ingredients that are essentially not eaten- like the marinade. People giving bad review based on the values need to realize this. And maybe taste it before posting.....! - 1/15/09

    This was DELICIOUS! It wasn't to spicy for my household. I couldn't find chipotle peppers I bought the canned chipotle with adobo sauce and just chopped and seeded those. Ended up marinating it for two days and it was the best grilled chicken we've had in a LONG time!!! - 8/12/08

    Nice flavor! I substituted anaheim peppers for chipotle, but I could probably go a little hotter. Also, it was alot of marinade for 2 servings, so if you cut it in half, the calorie count is 283, sodium 86.2 - big difference from the stats listed. - 7/19/08

    I actually cut out the Olive Oil b/c it wasn't really doing anything for the recipe but adding fat. I also added a habanero pepper to the mix. It was really, really tasty!! It has just enough kick to it but the lime juice and the cilantro really cut the heat. - 1/18/08

    When I saw this recipe, I thought it looked good. After making the marinade, I was afraid it would be terrible. When we tried it, it actually wasn't bad, the heat level was pretty good, but there wasn't much other flavor. The marinade was a mess to make, but that could just be me. - 9/19/07
