GF Lentil Loaf

Ingredients
2/3 c. red lentils1 cup hazelnuts1 lg carrot2 sticks celery1 lg onion4 oz. zucchini3 TBS olive oil2 tsp curry powder1 egg beaten2 tsp salt4 TBS fresh parsley2/3 c. water
Directions
Chop carrot, celery, onion, and zucchini into small chunks.
Then food process into a finely chopped blend.
Fry vegs in olive oil 5 mins.
Stir in curry and cook for 1 min.
At the same time, mix soaked lentils and nuts, vegs, egg, salt, parsley, and water.
Grease and line the base/sides of a long 2 lb. loaf pan with parchment paper.
Preheat oven to 375 degrees F.
Bake the loaf for 75 minutes.
Cool loaf for 15 mins before turning over.
