Island Salad

Ingredients
Salad only:1/2 Orange, peeled and cut1 c Spinach, fresh1/2 Red Bell Papper, sliced into thin strips1 Tbsp Raisins1 c Napa Cabbage(not included)6 oz Island Pork Tenderloin (see recipe)2 Tbsp Cumin Vinaigrette (see recipe)
Directions
Peel and cut oranges cross wise into 1/4" think slices.

Toss Spinach, pepper, raisins, and cabbage together. Mound on a plate.

Arrange pork (not included) and orange slices on top. Drizzle with Cumin Vinaigrette (not included).
