Carol's Rum Balls

Ingredients
1 12 oz box Vanilla Wafers1/2 cup + 3tbsp Rum3 tbsp light corn syrup1 cup powdered sugar4 ozs Chocolate Chips1/2 to 1 cup of pecans
Directions
Crush vanilla wafers in plastic bag.
Mix in Rum, Powdered Sugar and corn syrup until the vanilla wafers are moist
Stir in Chocolate chips and chopped pecans (to taste)

Put in refrigerator several hours or overnight to harden. Then roll into balls about the size of a melon ball and lay out on waxed paper. Sift Powdered sugar over top and roll balls around in excess sugar to fully coat.

They are best served cold or right from the refrigerator because they become gooey and soak up all the powdered sugar if left out for too long. They are great but don't eat too many!
