Chicken Enchilladas

Ingredients
Wheat tortillas - 4Boneless, Skinless Chicken breast - 2 (6 oz. each)Reduced Fat Sour Cream - 1 c.2% Shredded Cheddar - 1/2 c.Chopped yellow onion - 1 c.Chopped/shredded cilantro (to taste)Paprika - 1/4 tbspSiracha (to taste)Red Enchillada sauce - 1 can
Directions
Preheat oven to 400*F.
Grill or pan cook chicken breast until just done. Cut into 1/2 inch pieces.
Grill chopped onion in pan with 1 tbsp oil until cooked.
Combine sour cream, cilantro, onion, and cheese.
Warm tortillas until soft. Stuff one fourth of the chopped chicken breast into a tortilla and add one fourth of the sour cream mixture on top. Roll into taco, stuff ends in, and place in pan ('seams' down). Repeat for other 3 tortillas.
Top with enchillada sauce.
Cover with foil and bake for 30-40 minutes
