Easy Chicken Chili

Ingredients
Saute over med-high heat:2 T olive oil in a 3 qt. pot1 medium onion, chopped3 cloves garlic, pressed (or 3t. crushed garlic)Add:2 chicken breasts, chopped (1" dice)Brown chicken over medium-high heatAdd to pot:1 can zesty pinto beans, undrained1 can kidney beans, drained2 cans black beans, drained1 can chopped tomatoes (mexican style if you like)4 T fresh salsa (we like Reser's)Spices to taste:1t +/- ground cumin1t +/- chili powder1T or more chopped cilantro1t +/- granular garlicblack pepper
Directions
Simmer 15 minutes. Makes 10 one cup servings.

We eat this with tortilla chips or over brown rice.

The kids like to add sour cream and shredded cheddar cheese, but I rarely have that many calories left at dinnertime, and I enjoy it without the dairy add-ons.
