Quick Berry Cobbler

Ingredients
3 cups fresh or frozen berries of your choice (I use Trader Joe's Very Cherry Berry Blend, thawed)1 tbsp powdered sugar2 cups multigrain pancake mix1 cup milk2 large eggsCooking spray
Directions
Lightly spray the inside of an 8x8 inch baking pan with cooking spray. Place berries in dish, stir in the powdered sugar. In a large bowl, mix together pancake mix, milk and eggs. Pour batter over the top of berries. Bake for about 30 minutes at 350 degrees.

Serves 6. Great topped with a scoop of lowfat vanilla frozen yogurt!

    I added lemon zest to berries and 2T pwderd sugar - Need to add 1T sugar to pancake mix along w/ 1/2t cinnamon. Good basic recipe. - 8/21/11
