Ingredients
1 small onion2-3 cloves garlic2-3 stalks celery6-8 mushrooms1 cup quinoa28 oz diced tomatoes1 cup vegetable stock1 tsp thyme1/2 tsp salt1/2 tsp pepper
Directions
Saute all the chopped vegetables. Add quinoa and saute for a minute, stir in diced tomatoes (do not drain) stock, thyme, salt and pepper. Mix together, reduce to low and cover and simmer for 25-30 minutes until liquid is reduced. Makes 4-6 servings,

    I made this a few days ago. Not only was it easy, it was delicious. (I added cayenne to spice it up). I froze some as well to determine if it thaws well. It does. - 1/23/12
