Mexican Chicken Meatloaf

Ingredients
1 lb ground chicken1/2 cup egg substitute1/2 cup bread crumbs1/2 cup quaker oats3-4 tablespoons salsa2 tablespoons light sour cream1/2 package lower sodium taco seasoning1/4 cup reduced fat shredded mexican cheese blend1/2 cup chopped onion
Directions
Preheat oven to 350.

Put all ingredients (besides the cheese) in a big bowl and mix with hands until well blended. Spoon into a well greased muffin pan and evenly fill all 12 openings.

Bake for 25 minutes and then top with cheese and cook for an additional 5-10 minutes.

A serving is 2 'muffins'.
