Ellie Krieger's Lemon Orzo Chicken Soup

Ingredients
6 1/2 cups Trader Joe's Low Sodium Chicken Broth1 1/2 boneless chicken breast halves1 Cup Whole Wheat Orzo1 Cup Chopped Carrots3 Celery Stalks, chopped2 Large Eggs2 tbsp Olive Oil1/2 Tsp ThymeLemon Juice (3 tbsp)
Directions
Pour 1 tbsp of olive oil in a pot. Cook the chicken. Remove the chicken and pour the remaining olive oil in the pot. Add the chopped vegetables and thyme and cook until softened, about 5 minutes. Add 5.5 cups of chicken broth and bring to a boil. Add the orzo and simmer until cooked.

In a small bowl, mix the large eggs with lemon juice. Then add the remaining 1 cup of hot chicken broth. After mixing, add to the soup and add the cooked chicken. Cook on low for a little while longer and serve!
