1 medium apple cored and diced.1 medium celery stalk diced.3 tbsp diced onion.3 skinless boneless chicken breast cooked and diced.2 tbsp of chopped walnuts ( about 1 oz.)1/2 cup Kraft light mayo.1Tbsp of orange zestjuice of one orange1 tbsp of basil1tsp of garlic powderpepper to taste.
Poach the chicken breast. Meanwhile chop the first 3 ingredients. When Chicken is done, chop and add to the chopped apple mixture. Add the mayo, juice of one orange and zest, basil, garlic powder and pepper to taste. Mix well. Add on leafy greens or whole grain bread for a wonderful sandwhich. You may also use lemon juice and zest if you prefer. Yeilds 8- 1 cup servings.
