4 quarts water2 lbs beets, peeled & cut into straws 4 Leeks1 Large carrot peeled & sliced thinSaltLemon JuiceDill weed
Add beets, carrots, and leeks to boiling water. Boil until beets and carrots are tender. Add Salt, fresh lemon juice and dill weed to taste.
Many additions can be made to this recipie such as: potatoes, pork & beans, sour cream, mushrooms, hard boiled eggs. Experiment & add what you like but don't forget to add the calories.
Can be served hot or chilled during the summer.
Serve hot or cold.
