Stuffed Red Bell Pepers for Two!

2 medium Red Peppers (approx 2-3/4" long, 2-1/2" Turkey, Ground turkey, 93% lean, 4 oz Tomato Paste, 1 can (6 oz)Monterey Cheese, .3 cup, shreddedOnions, raw, 2 tbsp chopped Garlic, 2 cloves Ricotta Cheese, part skim milk, .25 cup Spinach, fresh, 1.5 cup
1.Start with grilling turkey burger, onion and garlic, add spices while cooking, salt, pepper, dried basil, ainse, and if you like it spicey some chili pepper flakes. Once browned remove from heat and place in large bowl.
2. Next cut red bell peppers in half lengthwise. De seed and place seeds in large bowl with meat.
3. Chopp and shred cheese and add to large bowl, add tomato paste and stir.
4. Fill each half of bell pepper with mixture, lastly put a small dollop of ricotta cheese on each bell pepper.
Cook till cheese melts at 425 degrees.
