Lamb with Dijon and Herb Crust

Ingredients
3 Lamb Chops, about 1 inch thick, trimmed of excess fat1 Tbs. Dijon Mustard2 Tbs. Fresh Basil, finely chopped2 Tbs. Fresh Rosemary, finely chopped1 Tbs. Dried Oregano, crumbled between thumb and fingerSalt & Freshly Ground Pepper
Directions
Preheat oven to 375F. Prepare your herbs by chopping finely and mixing together with salt and cracked pepper, then spread out evenly on your chopping board. Rub chops all over with Dijon (rule of thumb is about 1 teaspoon per chop). Take chops one at a time and coat on all sides with herbs (do this lightly at first, shaking off excess to ensure you can cover all chops, if you have left over herbs go back with each chop and press on).
Place chops in baking pan big enough that they don't touch each other (you'll want even heat around them for proper roasting). Roast in preheated oven 375F about 15 minutes for medium rare, slightly longer for medium.
