Bacon & Chive Chicken and Rice Casserole

Ingredients
2 lbs boneless/skinless Chicken breasts2 cups rice1 can (10.75oz) cream of mushroom soup2 cans (10.75oz) cream of chicken soup4 cups water6 ounces Provolone Cheese slices2 (1.25oz) pkgs Roasted Potato Seasoning Mix, (Bacon & Chives flavor)
Directions
Cut up the raw chicken into bite size pieces. Mix all ingrediences except provolone cheese and pour into a 13x9 inch pan. Bake at 350 degrees for 1 hour. Layer the provolone cheese over the top. Bake for an additional 5-10 minutes. Makes 12 servings, approx. 1 cup size.

    I altered it slightly, making jsut enough for two servings and cooking on the stove top. SO tasty! The potato seasoning is a FANTASTIC idea!!! 5 calories per serving, and it really tasted like I'd added fresh bacon! - 5/27/08
