Insanely Easy Vegetarian Chili

Ingredients
Pam Cooking Spray1 cup, Onions, chopped3 clove Garlic, minced1 cup, Green (or Red) Peppers, chopped 1 cup, Carrot, chopped 3/4 cup, Celery, diced 1 cup, Mushrooms, sliced 28 oz can Tomato Sauce 1 Can Corn (undrained)1 Can Red Kidney Beans1 Tbl Chili powder1 1/2 tsp Oregano1 1/2 tsp Basil
Directions
Spray large sauce pan with cooking spray. Saute onions, carrots, garlic until tender. Stir in green & red peppers, celery and chili powder. Cook until vegetables are tender about 6 minutes.

Stir in Mushrooms and canned tomatoes, beans, and corn. Season with oregano, and basil.

Bring to a boil and reduce heat to medium. Cover and simmer for 20 minutes. Stirring occasionally.
