Aloo Gobi, Cauliflower with Potatoes

Ingredients
Olive Oil, .25 cupOnions, raw, 1 cup, chopped Cilantro, 1 bunch, stalks and leaves separatedJalapeno Peppers, 1 pepperCauliflower, raw, 1 head, large (6-7" dia)Potato, raw, 1 large (3" to 4-1/4" dia.)Tomatoes, red, ripe, canned, with green chilies, 1 canGinger Root, 4 tsp gratedGarlic, 3 cloves choppedCumin seed, 1 tbspTurmeric, ground, 2 tspSalt, 2 tspGaram Masala, 2 tsp
Directions
Heat oil in saucepan, add onion, and 1 tab. cumin seeds. Stir together; cook until onions are creamy and golden.

Add chopped cilantro stalks, turmeric, salt and chopped jalapeno. Stir in tomatoes, ginger and garlic. Add potatoes, and cauliflower, plus 2 tabs. water.

Cover and cook until potatoes are done about 20 min., add 2 tsp. garam masala, and stir. Sprinkle with cilantro leaves, turn off heat, cover, and let stand 30 min.

    Very tasty and easy. The tomato gave it a different taste than the aloo gobi we get from the local Indian restaurant. I used chili powder instead of jalapeno and used way less olive oil - 2/19/11

    This was really, really tasty! I added more potatoes and a 28 oz can of crushed tomatoes because I wanted it saucier. I was concerned about diluting the spices with the additional ingredients, but it turned out to be just right for my palate. Delicious! - 11/13/10

    This was pretty good even though I made some substitutes. I didn't have cilantro so I used parsley. I didn't have garam masala so I added a few tablespoons of tomato paste with Tandoori mix. I also added sweet potatoes. It needed salt & I kinda went overboard on the green chili, but it was yummy. - 5/19/13

    Wow! I have tried different Aloo Gobi recipes trying to replicate the kind at restaurants, but none have worked until now. This one was awesome! I didn't have a jalapeno, so added some dried chili flakes instead, but it worked fine. I will definitely be making this again :) - 1/16/11
