Simple Broiled Haddock

2 Haddock Fillets (about 1lb total)1 tbsp Hellman's low fat mayo1/4 cup bread crumbs (I like to use whole wheat)2 tbsp fresh Parmesean Cheese2 lemon wedgesSalt & Pepper to taste1 tsp parsleyNon-fat Cooking Spray
Preheat Broiler
Spray pan with non-fat cooking spray
Salt & Pepper haddock.
Top each with 1/2 tbsp of mayo.
Mix breadcrumbs parmesean cheese, and parsely. Sprinkle over fillets.
Broil on high for 10 minutes, or until fish flakes easily with a fork.
Serve with 1 wedge of lemon.
You'll notice that I'm calculating about 8oz of fish per person, this is because we mainly eat protein/veggies at dinner. This can easily be done with whatever portion you desire.
