Hot & Sour Soup (adapted from Atkins)

Ingredients
1/4 cup white rice vinegar1 tbsp xanthan gum1 tsp canola oil1 clove garlic, minced1/2 mushrooms chopped (can, fresh)4 cups vegetable broth300gm soft tofu, diced about 1/4 "1 tbsp low sodium soy sauce1/2 tsp red pepper flakes1 tsp dark sesame oil3/4 cup egg whites (for thicker soup & extra protein)
Directions
Whisk vinegar and xanthan gum together, set aside. Heat canola oil in medium saucepan or casserole type fry pan, add garlic and saute about 30 sec. Add mushrooms and saute about 3 min. Add stock, tofu, soy sauce, pepper flakes and simmer about 5 to 7 min. Stir in vinegar mixture well and simmer until soup thickens, about 1 min. Add sesame oil and egg whites just before serving.
