Shrimp Spring Roll

Ingredients
4 spring roll skins1 cup chopped shrimp4 large lettuce leafs1 cup grated carrot1/4 cup grated radish1/2 cup chopped cilantro1/4 cup chopped mintlettuce leaves for serving base
Directions
Prepare vegetables. Chop shrimp and stir fry in Pam.
Moisten 1 spring roll skin so that it is pliable. Layer 1 lettuce leaf, 1 Tbsp. mint, 2 Tbsp cilantro, 1/4 cup grated carrot, 1 Tbsp grated radish, and 1/4 cup cooked chopped shrimp. Roll up, moisten edge to seal. Cut in half diagonally. Repeat with the other skins. Makes 8 appetizers.
