Slow Cooker Red Beans and Rice

Ingredients
1 lb dried red beans1 quart water4 tbs better than bouillon beef base2 tbs cumin3 tbs chili powder2 dried bay leaves2 tsp cayenne powder1 tbs smoked paprika2 cloves finely minced garlic1 medium onion diced2 tbs fresh ground black pepper
Directions
Sort and soak beans overnight. Soaking overnight helps to remove the "gas" in the beans.

Remove from water and rinse will. Place beans in a slow cooker.

Turn slow cooker on low and place in diced onions, minced garlic, seasonings, water and bouillon base.

Allow to cook for 4-6 hours. Adding water if necessary to create gravy.

To create a creamier texture use a potato masher to mash some of the beans. At this point you may choose to add more seasoning.

Serve over hot rice. Makes 8 hearty servings.

    I used a low-sodium chicken broth instead of the water and beef bouillon and because of that, it needed a bit more salt. A little spicy for my kids, but my husband and I really liked it. I'll definitely make it again! - 2/25/10
