Becky's Baked Ziti With Chicken

Ingredients
1.5 Cups Red Bell Pepper1 cup Onion1 T Olive OilJarred Spaghetti Sauce1 lb Skinless Chicken Cooked, Cubed24 oz can diced tomatoes (liquid reserved)14.5 oz box Ronzoni Smart Taste Penne6 oz. Mozzarella Cheese
Directions
Heat olive oil in shallow pan. Add bell peppers and onions-stir to coat. Season with salt and pepper to taste. Cook till soft 2-3 minutes. Add garlic to the pan if desired. Cook 1 more minute. Add jarred tomato sauce and DRAINED diced tomatoes. RESERVE the tomato liquid. Add 1 pound cooked chicken. Heat through. Add spices as desired. While the sauce in cooking bring your salted water to a boil and cook pasta. Cook only until it's al-dente. Once pasta is cooked, drain pasta. In a large bowl combine pasta, sauce mixture and 24 oz container of cottage cheese. If you need extra liquid you can add the reserved liquid from the tomatoes. Spread combined mixture in a 13X9 pan. Cover with 6 oz of mozzarella. Bake in 350 degree oven for 20 minutes or until cheese melts. Makes 7 generous portions.
