4 10" burrito size flour tortillas1 lb ground buffalo1 carrot shredded1 package taco seasoning mix1 cup chopped lettuce1/2 cup shredded cheddar2 plum tomatoes seeded and chopped
Heat oven to 375F cut three 4 1/4 in circles out of each tortilla. lightly coat tortilla circles with nonstick spray. place each circle into a muffing pan to shape into a cup. bake 8 to 9 minutes untill crisp. cool
meanwhile cook buffalo and carrot with taco seasoning according to package directions. divide buffalo mixture, lettuce, cheddar and tomato among taco cups
