Ingredients
1.5 cups sugar3 eggs1 cup applesauce3 cups flour1 tsp Vanilla1 tsp baking soda1 tsp baking powder2 cups grated zuchinni1 tsp salt
Directions
Beat eggs, applesauce, zuchinni and vanilla. Add all dry ingredients. Bake at 350 for 1 hour. Makes 2 loaves.

    this recipe was really good. I liked adding the applesauce instead of butter/oil. I made two batches and made cupcakes instead of bread. Made 48 for double batch. The second batch I added Kakao (German for cocoa) for my son. - 4/4/11
