Nutty Flaxy Low Carb Cookies

1 Cup of Almond Butter w/ Roasted Flaxseeds (Trader Joe's) (You can also use any natural almond butter or peanut butter, with no sugar added.)1 cup sweetener equivalent. (I used 1/2 cup Splenda, and 2 T Fiberfit, but any combination equivalent to a cup of sweetener (or sugar, if you're not low-carbing.))1 egg1 tsp. vanilla (or other flavoring or extract. I used 2 T. of Torani's coconut syrup).1/2 cup coconut (unsweetened) (optional)(You can make the simplest version of this recipe with the nut butter, sweetener, and egg. Adding coconut makes them more flavorful and moist; using a flaxseed version of nut butter adds omega-3s and fiber; and using any sugar-free syrup will add more flavor.)
Preheat oven to 350 degrees, and lightly grease a cookie sheet.
Mix all ingredients together, and roll into 1 1/2 inch balls. Place the balls on the cookie sheet, about 2 inches apart. Mash the balls with a fork dipped in sweetener.
Bake until set, 8 - 10 minutes.
