Black Bean & Corn Summer Salad

Ingredients
16 oz bag frozen sweet yellow corn thawed2 - 15.5 oz cans balck beans, rinsed and drained1 each medium red, yellow, orange sweet peppers diced1 bunch fresh cilantro rinsed and chopped1/2 med red onion, chopped2 cloves fresh garlic, crushed2 T olive oilsalt to taste
Directions
Combine all prepared ingredients in a large bowl and stir together. Store in refrigerator for at least one hour before serving. This recipe lends itself to mixing and matching different types of corn, beans, onions, and peppers. If you add tomatoes be sure to add them just before serving or add whole grape tomatoes. I estimate this makes 12 - 1/2 Cup servings.
