2 pounds ground beef , leanI medium-large diced onions 2 garlic cloves, minced2 (15 1/2-ounce) cans black beans 1 (15 1/2-ounce) can kidney beans1 (15 1/4-ounce) can whole kernel corn, drained 1 (14 1/2-ounce) can stewed tomatoes with celery and onion1 (14 1/2-ounce) can diced tomatoes 1 (14 1/2-ounce) can tomatoes with chiles 1(7-ounce) cans diced green chiles 1 can black olives, drained and sliced1 (1 1/4-ounce) package taco seasoning mix 1 (1-ounce) package ranch salad dressing mix ( I prefer Hidden Valley Fiesta Ranch for an extra kick) Optional Garnishes: low fat cheddar or mexican cheese, low fat sour cream, and tortilla chips. At minimum, I recommend a small amount of chips and cheese for more flavor.
Makes 16 servings (Please note - nutrition information does not include optional garnishes)
Cook Ground beef with Onions and Garlic, Drain. Add all beans, corn, tomatoes, chiles, black olives and seasoning mixes. Cook on low in crock pot for 6-8 hours.
Top with garnishes.
