Casein & Gluten Free Cornmeal Muffins

2 eggs1 cup skim milk, or milk substitute. (I used Darifree)1 1/2 cups cornmeal1/4 cup flax seed3/4 cup Bob's Red Mill Gluten Free flour1/4 cup raw sugar1 TBS Baking Powder3/4 tsp salttsp xanthan gum (optional)
Heat oven to 450. Line muffin tin with papers.
Mix ingredients into a bowl, and drop them in by 1/4 cup each.
Bakes at 450 for 15 minutes.
Makes 12.
