Fiber Rich Oatmeal Cookies

Ingredients
½ cup (1 stick) butter, softened1 cup brown sugar1 egg½ tsp vanilla½ cup all-purpose flour¼ cup whole wheat flour½ tsp baking soda½ tsp cinnamon¼ tsp salt1½ cups old fashioned, uncooked oats½ cup dried cranberries½ cup chopped pecans or walnuts½ cup coconut flakes
Directions
Heat oven to 350 degrees.


Beat together butter and sugars until creamy.


Add egg and beat well.


In a separate bowl, combined flour, baking soda, cinnamon and salt. Add to wet mixture and mix well.


Stir in oats, cranberries, nuts and coconut flakes.


Drop by rounded tablespoons onto an ungreased cookie sheet.


Bake 10 to 12 minutes or until golden brown.


Cool one minute on cookie sheet. Then, move to a wire rack to cool completely.

Makes 20 cookies.
