2/3 cup skim milkjuice of 1/2 lemon, whole lime1 1/2 cups spelt flour1 cup brown rice flour1 tsp baking powder1/2 tsp baking soda3 TBSP agave syrupzest each 1/2 lemon, whole lime2 egg whites1/4 cup olive oil1 tsp vanillaolive oil cooking spray
sift all the dry ingredients in a bowl. In a large measuring cup (2 cup capacity) measure and mix wet ingredients. add wet to dry. mix until moistened. plop 1/3 of batter on greased pan, shape into circle, 1" thick....do 2 more times. bake at 350 for 15 minutes until golden brown, cute each circle into 8 wedges while still warm...allow to cool and enjoy.
**before baking you could sprinkle them with some cinnamon sugar to add some sweetness. I didn't, and they are just fine...
