Apple Butter Spice Cookies

1/2 cup butter (one stick)2 1/4 cups Bob's Red Mill Whole Wheat Pastry Flour1/4 cup Splenda Sugar Blend for Baking1/4 cup Splenda Brown Sugar Blend1 large egg1/2 cup apple butter (or, in a pinch, a fruit puree such as applesauce or pears)1 tbsp honey 1/2 tsp cinnamon1/4 teaspoon ginger1/4 tsp cloves1/4 tsp salt1/2 tsp baking powder
1. Cream butter and Splenda blends in a large mixing bowl.
2. Beat in egg, honey, and apple butter.
3. In another bowl combine flour, cinnamon, ginger, cloves, baking powder, and salt.
4. Add the flour mixture, in thirds, to the butter and sugar mixture and mix until blended.
5. Wrap dough in plastic wrap and chill for about 1 hour.
6. Preheat oven to 375° F.
7. Lightly grease or spray 2 cookie sheets.
8. Roll dough into one-inch balls; place 3 inches apart on cookie sheets.
9. Flatten each ball of dough with a fork.
10. Bake for 10-12 minutes.
