Tomato Sauce (Bulk Recipe)

102 oz can crushed tomatoes6 oz can tomato paste2 medium onion 3 garlic cloves 2 carrots4 mixed baby peppers1 TBSP olive oil2 TBSP fresh Basil1Tbsp Oreganos/p to taste1/4 c fresh paremesano cheese
Chop veggies and put in food processor. Process until looks like stage 2 baby food.
Heat oil in large pan, add veggies, allow moisture to cook out, add salt if you want to. Once moisture is gone add tomato paste. Cook veggies/paste until they are brown. Do not rush this step. Be sure to keep scraping bottom of pan. If mixture gets too dry add small amount of water. Once brown add crushed tomatos. Allow sauce to simmer. After 1 hour add Basil, Oregano and cheese. Continue to simmer for another hour
This makes approx 24 1/2 cup servings
