Cheesy Tilapia

Ingredients
1/4 C Bread Crumbs1/4 C cooked Brown Rice3/4 C Cottage Cheese, no salt added2 Tilapia Filletsseasonings to taste
Directions
Preheat oven to 400 degrees.

Lightly spray a baking sheet or pan with cooking spray.

In a small bowl, mix first 3 ingredients together in a small bowl, and season to your taste.

Place mixture on top of defrosted tilapia filets.

Starting from the fattest end, gently roll filet around filling. Once complete, fasten with a toothpick.

Bake for approx. 30 minutes, or until fish is flaky.

Option - if your fillet is narrow or thick, you can simply top the fillet with the prepared mixture and skip the rolling step - merely bake it as is.
