Ginger Apricot Scones

Ingredients
2 1/4 C. flour1/3 C. granulated sugar1 T baking powder2 tsp. lemon zest (1 lemon's worth)1 1/2 sticks of butter (frozen, chopped into 1" cubes)1/2 C candied ginger, chopped1/2 C dried apricots, chopped.
Directions
I cut them out with the mouth of a little jelly glass.

In the food processor, combine dry ingredients, then add butter and zest. Pulse to fine meal. Turn out into a bowl, add yogurt and just combine. Add fruit. Flour counter and your hands, gently knead a few times, pat out flat and cut out. Pat together scraps and make more. Bake for 15 min. at 400 degrees.
