Mini Broccoli & Cheese Frittatas

Ingredients
1 cup steamed broccoli2 cups egg substitute1 cup shredded low-fat cheese (I use the mexican blend)
Directions
2 muffins per serving, 4 servings per recipe

Spray 8 cups of cups of nonstick muffin tin with Pam (or other cooking spray); divide broccoli among the 8 cups; add 1/4 cup of egg substitute to each cup.

Bake 7-9 minutes, or until almost set.
Sprinkle cheese evenly over tops of muffins.
Bake 8-10 minutes longer and let stand 2 minutes.
