Veggie Hamburger Noodle Soup (170 calories per cup serving)

2 carrots (7.5" long) chopped1 Onion, diced (about 1.5 cups)2 Celery Stalks (11 - 12" long), chopped1 tsp salt1 clove of garlic, minced1 Bay Leaf4 cups water4 Tbsp bouillion (Veggie or Beef)4 cups (about 1 pkg of bagged) shredded cabbage1 tsp Celery Salt1 Can (796 ml) Stewed Tomatoes - no salt added1 Can (796 ml) Diced Tomatoes - no salt added1 tsp Black Pepper1 Pkg (340 grams) Yves Veggie Ground Round Original1 cup (dry) whole wheat noodles (elbow macaroni or other)
1. Peel and chop carrots, onions, and celery stalks into sizable chunks. Toss into frying pan with Salt and minced garlic and cook until softened (about 5 mins.)
Meanwhile...
2. In a large soup pot, add stewed & diced tomatoes, celery salt, black pepper, bay leaf, 4 cups of veggie broth (prepared), 1 pkg of pre-shredded cabbage. Add onions, celery & carrots from frying pan and bring to a boil for 5 mins.
Then...
3A. If Adding Noodles... (complete recipe is 170 cals per cup)
Remain at a boil, add noodles and then add pkg of veggie ground round. Boil for 10 more mins.
Or
3B. If Not Adding Noodles...(recipe is 115 cals per cup)
Add pkg of veggie ground round, turn heat down and let simmer for 10 more mins.
