Matzo Ball Soup

Ingredients
Matzo Balls:1 packet matzo ball mix2 eggs1 T vegetable oil1 T water1 T chopped parsleyBroth:1 c homemade chicken stock1 c watersalt to taste
Directions
Mix together eggs, oil and water. Stir in mix and parsley.
Refrigerate 15 minutes. Boil 2 1/2 quarts water. Form balls 1 inch in diameter. Drop into boiling water, reduce to a simmer and cook covered 20 minutes.

Heat stock and water in a separate saucepan.

Serves 2 for dinner.
