Strawberry Dessert

Ingredients
12 vanilla wafers6 Strawberries12 t. Strawberry jam (sugar free)16 oz fat free cream cheese1/4 C whip cream1 t. lemon juice2 eggs1 T vanilla
Directions
Preheat oven to 325F. Line muffin tins with 12 foil cupcake papers. Place a vanilla wafer in the bottom of each cupcake paper.

In mixing bowl beat softened cream cheese and splenda, add eggs, vanilla and lemon juice. Beat well. Pour mixture into muffin tin cups. Bake for 30min. Let set to cool. Top each cake with 1tsp strawberry jam, and 1/2 fresh strawberry. Refrigerate over night covered. Makes 12 mini strawberry dessert cakes.

    Great recipe! I recommend using stevio instead of splenda because it's healthier and tastes much better. I also used light whipped cream instead of strawberry jam because the sweetness was a bit much. Very nice overall! - 3/17/08
